Scallop Bake

Ingredients

1 lb scallops

1 tsp salt

1/3 c butter

1/2 c chopped onion

1/2 c chopped celery

1 c sliced mushrooms

1 c chopped green pepper

1/4 c all purpose flour

1 tsp salt

2 cups milk

1 c soft bread crumbs

1 tbsp butter

1/4 c grated Cheddar cheese

Description

This elegant casserole combines the subtle flavour of scallops with vegetables and a white sauce, topped with cheese.

Directions

Separate the scallops; cut large ones in half horizontally. Sprinkle with salt.

In saucepan, melt 1/3 c butter; sauté onion, celery, mushrooms and green pepper until tender. Stir in flour and salt. Gradually stir in milk.

Cook over medium heat, stirring constantly until thickened. Remove from heat and stir in scallops until evenly coated.

Pour mixture into buttered 6-cup casserole. Top with bread crumbs; dot with 1 tbsp butter. Sprinkle grated cheese on top.Bake in 350°F oven for 20 to 25 minutes or until bubbly around edges.
